Sip's Ole Gucamole

Ingredients

3 ripe avocados halved and pitted
4 teaspoons lemon juice
1 large ripe plum tomato, seeded and chopped
2 tablespoons chopped onion (sweet)
Salt and freshly ground pepper to taste
Tabasco or hot pepper sauce to taste

Preparation

Scoop avocados into a bowl, add lemon and mash.

With a fork gently mix tomato, onion, salt and pepper, and Tabasco.

Serve fresh.

Pairs nicely with a dry Riesling such as 2008 Nodland Cellars Bebop.
Bebop is an up-tempo white with racy citrus with floral tones which is completely captivating.
