Grilled Pork Loin Slices

Ingredients

1 1/2 pounds Pork loin cut into ½" slices
3 tablespoons Light soy sauce
1 Lime, juice only
1 tablespoon Chopped fresh or dried rosemary
2 Garlic cloves finely chopped
Black pepper, freshly ground or
Hot pepper flakes to taste

Preparation

For the marinade: Combine all of the marinade ingredients in a shallow baking dish large enough to hold the pork slices in one layer. Thoroughly coat the pork with the marinade and marinate for at least 2 hours.

Meanwhile start a fire. Grill the meat over hot coals or wood embers for about 3 minutes on each side, basting with the marinade.

This recipe serves 4.

Variation with Broiled Pork Loin Slices: Prepare in the same way and cook 3 minutes each side under a hot broiler.

Comments: Serve this dish with either boiled potatoes or grilled polenta slices and a mixed green salad.
