pound pork (tenderloin cubed) |

tablespoons fresh lemon juice |

clove garlic, mashed |

teaspoon ground pepper |

Tomato barbecue sauce (¾ c. tomato catsup, 3 tbsp. brown sugar, 2 tbsp. soya sauce) |

Step 1 |
Cut one cup of meat into 1 1/4 to 1 1/2 inch cubes. Alternate meats with slices of onion and cubes of red and green peppers on skewers. Mix oil, lemon juice, garlic, salt and pepper together. Pour over meat. Marinade 1 to 2 hours turning once or twice. Prepare ginger tomato barbecue sauce. Grill loaded skewers over hot coals, or under broiler for 6 to 8 minutes per side or until done to your liking. Brush with barbecue sauce. Serve immediately. |
