(Makes approximately 2 cups) |

lemon, zested and juiced |

cups elderflowers, plus more for garnish |

pint strawberries |

cup elderflower syrup |

pints fresh whip cream |
Step 1 |
Make Elderflower Syrup: Heat sugar, water and zest and lemon juice bring to a simmer, add elderflowers, remove from heat, steep from 1 to 3 days, strain. |
Step 2 |
Wash, de-stem and slice strawberries and add them to a mixing bowl. Pour 1 cup of elderflower syrup over the top and mix well to combine. Serve on plates with fresh whip cream and garnish with remaining elderflowers. |
