Risotto Blu Curaçao With Fish Sauce

Prepare the fish sauce

Prepare the risotto: In a sauce pan cook the chopped onion in olive oil and add the rice and toast.

Deglaze with a glass of dry white wine.

Pour the fish broth and cook.

Just before removing the rice from heat, add 50 ml. about blue curacao liqueur (Or a few drops of blue food coloring gel,adjusting the amount according to the tone of color you want. The dye is tasteless).

Once cooked, stir in as a "normal" risotto. Have, therefore, the risotto on warm serving dish and garnish with fish sauce. Serve.
