Sally's French Vinaigrette

Ingredients

salt
Balsamic Vinegar

Preparation

Peel and roughly chop galic, place garlic in the bottom of your salad bowl cover with salt. Let garlic and salt sit for 3 to 5 minutes. Garlic will absorb the salt and become soft. Mash garlic with a fork. Add two spoons of oil (I use canola) to one spoon of Vinegar. Beat with fork. This can be done in advance and let sit. When you are ready add salad to bowl and toss.

About

I use canola oil because olive oil adds its own flavor. I use my salad spoon to measure the oil and vinegar so it is more than a table spoon. This is a recipy that you need to fiddle with the amounts till it suits your tast. But once you have it stick with the same spoon. It is delicious with any asortment of salad greens and vegtables. At Christams we add sliced pears and toasted pecans to the greens.
