Æbleskiver (Danish meaning ''apple slices'' (singular: ''æbleskive'')) are traditional Danish pancakes in a distinctive shape of a sphere. Somewhat similar in texture to American pancakes crossed with a popover, Æbleskiver are solid like a pancake but light and fluffy like a popover. The English language spelling is usually aebleskiver or ebleskiver. In the United States, the most famous version of the aebelskiver is a commercial repackaging of the pan, called Pancake Puffs, which is treated as a new invention, with no mention of its heritage included.

teaspoons baking soda |

eggs, separated |

cups buttermilk |

teaspoons butter, melted, plus extra for pan |

apple, roughly diced |
Serve with raspberry or lingonberry jam and powdered sugar |

Step 1 |
Sift dry ingredients together. |

Beat egg whites until stiff |
Step 3 |
Beat egg yolks and add to buttermilk, then combine with dry ingredients |

Fold in egg whites |

Place small amount of butter in each cup to coat |
Step 8 |
Pour batter to just under rim of each cup |

Cook for 1-2 minutes and with a large toothpick or skew, turn Aebleskiver 1/3 turn |
Step 10 |
Place a piece of apple in each Aebleskiver then turn after another minute, carefully pushing in baked batter that isn't inside the "ball" shape |
Step 11 |
Remove from pan when all sides are golden brown |

Jam can be spread on with a knife, but better to spoon the jam onto the plate, then mush an opened Aebleskiver into the jam, and then the sugar. Jam is preferred, since jelly won't stick in the mushing process.
