Basil and Orange Confit Compound Butter

Ingredients

- 1 stick unsalted butter (1/4 lb)
- 2 tablespoons fresh basil, chopped
- 1 tablespoon orange zest or orange confit, chopped
- 1 teaspoon olive oil
- Salt and pepper

Preparation

Let the butter reach room temperature.

Add butter, oil, basil, and orange confit to a small food processor.

Mix for a few minutes until everything is mixed throughly.

Season butter with salt and pepper.

Roll butter in parchment or wax paper and let harden in the fridge.

Add 1 tablespoon (or less) to each serving of grilled salmon.

Freeze remaining butter and use at a later date.
