Roomali Roti

Ingredients

1 cup Wheat flour
3 tbsps Clarified Butter
3/4 tsp Salt
1/2 cup Water
1 no Egg( optional)

Preparation

Swift flour and salt together in a large bowl.

Beat the egg well.

Add the clarified butter and beaten egg to the flour mixture and combine well with fingers.

Add water to the flour mixture in small quantities while mixing with the hands.

Once a smooth dough is formed, stop adding water and continue to knead the dough for 10 mins.

Cover the dough with wet cloth and set aside for 20 mins.

After 20 mins divide the dough into lemon sized equal balls.

Heat tawa or a griddle on high flame.

Roll out each lemon sized dough into to very thin rounds with rolling pin.

Place rolled out rotis one at a time on hot griddle, cook for a minute and turn the roti on other side, cook for another minute and remove from heat.

Fold the rotis like kerchief and serve with hot curries of your choice.
