Sweet Potato Kugel

Ingredients

6 small sweet potatoes, peeled and grated

1 cup matzo meal

3 apples, peeled and grated

2 teaspoons cinnamon

1 cup walnuts, chopped (optional)

1 cup apple juice or water

Preparation

Mix all ingredients together.

Press into a large baking dish.

Bake in a preheated 375F oven for 45 minutes or until crisp on top.
