half breasts of chicken

(1 lb. 4 oz.) can pineapple chunks

cup syrup from pineapple

tablespoons soy sauce

tablespoons flour

cup catsup

tablespoons sugar

1

tablespoon dry sherry (optional)

cup cooking oil

1 ½

tablespoons toasted sesame seed (optional)

tablespoons lemon juice

Step 1

Remove skin and bones from the chicken breasts. Cut into chunks or strips. Drain pineapple, reserve syrup. Combine 1/4 cup syrup with catsup, sugar, soy sauce, lemon juice and sherry. Simmer 10 minutes. Meanwhile, flour chicken pieces. Brown chicken pieces quickly in heated oil in 10" skillet for about 10 minutes. Drain well and remove to 9"x13"x2" baking pan. Add pineapple chunks. Pour sauce over. Toss to coat well and sprinkle with sesame seeds. Bake in 375 degree oven for 15 minutes until chicken is cooked and glazed. Serve with hot cooked rice.
