[edit] About Filleting

Cutting technique used on meat and fish which yields long thin strips. With fish, this is a primary method of removing flesh from the bones. There are a number of special knifes designed for this task, which tend to be sharp, thin and flexible allowing the blade to bend and run along the spine of a fish.
