A candy thermometer, also known as a sugar thermometer, is a thermometer used to measure the temperature and therefore the ''stage'' of a cooking sugar solution. (See Candy for a description of sugar stages.) These thermometers can also be used to measure hot oil for deep frying. There are several kinds of candy thermometers available. These include traditional liquid thermometers, coil spring "dial" thermometers and digital thermometers. The digital thermometers tend to read the temperature more quickly and accurately, and some models have an alarm when the thermometer hits a certain temperature. Many models have markers for the various stages of sugar cooking. A candy thermometer is similar to a meat thermometer except that it can read higher temperatures (usually 400°F/200°C or more).

A Candy Thermometer is a tool used to measure the temperature of candy syrups while cooking. It is designed to measure temperatures from as low as 40 F (4 C) up to a high of 400 F (204 C).
Candy thermometers can have a liquid based feature or have a digital display. The liquid based type requires the user to watch the rising line to measure the various temperature stages for heated sugar, while the digital type allows the user to clearly identify the various stages of heated sugar which include soft ball, soft crack, hard crack, very hard ball, thread and caramelized.
A Candy Thermometer is vital in the making of candy to ensure that the desired consistency is achieved at the end of the candy making process. Without one, the end result could be disastrous.
