
Classic eggs Benedict is delicious but sometimes it's time to take out the spices and a put a twist on an old favorite. Bobby Flay has been making his version of eggs Benedict at his restaurant Mesa Grill for over a decade. There's a reason why it hasn't come off the menu. Try serving this dish with hibiscus iced tea.
Sweet Potato-Chicken Hash with Poached Eggs with Green Chile Hollandaise
Serves 4
Ingredients:
2 large sweet potatoes
3 boneless, skinless chicken breasts
2 scallions, thinly sliced
1/4 cup cilantro, coarsely chopped
1/4 cup canned chipotle peppers
1 tablespoon honey
Salt and freshly ground pepper, to taste
2 tablespoons olive oil
3 cups water
1 tablespoon white wine vinegar
4 eggs
