Nothing says childhood to me, like a crispy ginger snap. It was one of those cookies that my grandmother used to offer us, not too sweet and hard enough to nibble on the whole time we watched the Lawrence Welk show, while we waited for Disney to come on.
Ginger Snaps
3/4 cup lard
1 cup sugar
1/4 cup light corn syrup
1 egg
2 cups flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1 tsp ginger
Cream lard, sugar and egg until light and fluffy
Add dry ingredients and stir until well combined
Roll cookies into balls and dip into sugar
Place on greased cookie sheet
Bake at 350 degrees for 15 minutes
Cookies will rise and then fall into the cracked appearance you recognize
