Eggnog muffins are a festive holiday breakfast that are so easy that they can be whipped up any day of the week. If all the ingredients are measured and prepped the night before, then they can easily baked in the morning. I love to bake these eggnog muffins the morning after Thanksgiving with some eggs, crisp sausage, and seasoned potatoes.
Ingredients:
2 cups flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup rum
1 large egg, beaten
1/2 teaspoon nutmeg, grated
Directions:
Preheat oven to 400F.
Sift together flour, sugar, baking powder and salt in a large bowl. Stir in eggnog, rum, melted butter, egg and nutmeg.
Spoon into 12 paper-lined muffin cups.
Cool on rack 10 minutes before removing from pan.
