Irresistible Strawberry Bread

This irresistible strawberry bread will put a spring in your step in the mornings.  Sweet slices of strawberry and mixed in a standard quick bread that is flavored with cinnamon and chopped pecans.  Fresh or frozen strawberries would work in this recipe.  Spread each slice with a thick layer of cream cheese and strawberry preserves for a berry good breakfast.

Strawberry Bread


2 cups sugar
1 teaspoon salt
1 teaspoon cinnamon
3 eggs, well beaten
2 (10 oz) pkgs. frozen sliced strawberries, thawed and drained
1 cup chopped pecans
1 1/4 cups vegetable oil

Combine all dry ingredients; add eggs and oil, stirring only until all ingredients are moistened. Stir in strawberries and nuts. Bake at 350 degrees for 1 hour or until bread is tested done. Let stand overnight before slicing.
