Pure Comfort: Pepperoni Pizza Melt

The pepperoni pizza melt from The Avateur Chef melds to classic comfort foods: pepperoni pizza and grilled cheese.  This is a quick and easy dish that will please even the pickiest eater.  Tomato sauce is spread on bread before cheese and pepperoni slices are placed on each side of the sandwich.  It is cooked on the griddle until it's golden brown.  Eat this pepperoni melt as a snack or a light lunch.

Pepperoni Pizza Melt

Ingredients:

1/2 tablespoon Vegetable Oil
30 slices Pepperoni
6 ounces fluid Water
1/2 teaspoon Salt
1/2 teaspoon Parsley
1/2 teaspoon Basil
1/2 teaspoon Oregano
1/2 teaspoon Red Pepper Flakes
1/2 teaspoon Garlic Powder
1/2 teaspoon Sugar
12 slices American Cheese
1 teaspoon Butter
 
Directions:
 
Heat the oil in a large skillet and cook the pepperoni.
 
Combine the tomato paste and water until smooth. Fold in the salt, spices and sugar into the tomato mixture.
 
Spread the tomato sauce on one side of each slice of bread.
 
Assemble the sandwiches:
 
Place a slice of cheese onto the tomato-spread side of each slice of bread.
 
Place 5 slices of pepperoni onto one side of each sandwich, and close the sandwiches.
 
Melt the butter on a griddle and toast sandwiches on both sides until crispy and golden brown. Use a weight or sandwich press to press the sandwiches onto the griddle.
