Candied Sweet Potatoes

With Thanksgiving only a couple of weeks away, it's time to start thinking about the menu.  Candied sweet potatoes are a classic side dish and a must-have on the table.  However, this year opt for this homemade recipe instead of the can.  Medallions of sweet potato are roasted with brown sugar, coffee, and butter until they are gloriously sticky and golden brown.  If you are worried about oven space, you can make this dish a day in advance and reheat the sweet potatoes on the stove top.

Candied Sweet Potatoes

Ingredients:

1 cup brown sugar, packed
1/4 cup butter
1/4 cup coffee
6 mediums sweet potatoes
 
Directions:
 
Preheat oven to 350 degrees.
 
Mix sugar, butter and coffee together in a small saucepan; boil for 5 minutes.
 
Slice the sweet potatoes into medallions and arrange in a shallow baking dish.
 
Pour the syrup over the sliced potatoes; bake for 45 minutes, basting occasionally
