Gluten-Free Coconut Caramel Banana Pudding

Here's a recipe that will help you get rid of your rotting bananas. The Gluten Free Canteen created this recipe with a sweet caramel sauce to top it all off. The baker notes that it is important not to heat the cornstarch for too long, or stir it too much. 

Gluten-Free Coconut Caramel Banana Pudding

- 100g white sugar
- 100 g water
- 2 medium very ripe bananas
- 815g So Delicious Unsweetened Coconut Milk
- 6 tbsp GF cornstarch
- 3 large egg yolks
- 1/2 tsp kosher salt
- 75g sugar
- 1 tsp vanilla
- 1 tsp dark run (optional)
- whipped cream and small GF ginger or vanilla cookies (optional)
