One-Bite Appetizer: Hot Tamale Nibbles

This tamale recipe cuts the traditional cooking time in half! Plus, you can use leftover cooked chicken, beef, pulled pork or other meats from a previous weeknight meal to make this quick and easy Mexican appetizer! For your next party, bake up a few muffin tins of these cute, bite-size hot tamale nibbles.

Tamale Nibbles

Ingredients:
2 cups masa (corn flour)
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cumin
1 1/3 cups beef stock
2/3 cup vegetable shortening, melted
1 pound cooked shredded beef (or pork or chicken)
2 teaspoons masa
1 tablespoon tomato paste
1 clove garlic, minced
1/3 cup chopped onion
1 teaspoon ground cumin
1 tablespoon fresh thyme leaves,+ extra for garnish
2 cans chipotle pepper, chopped
1/4 cup sour cream (optional)
1 tablespoon fresh lime juice
Water
Salt and pepper
Crumbled Queso Fresco to garnish
