1 ¼ cups whole wheat flour (atta)
75 Gms (¾ stick) butter at room temperature
¾ cup powdered sugar
3 tablespoons beetroot puree
A pinch of salt
Pre-heat the oven to 400 F. Cover the baking tray with foil.
Boil a medium size beetroot till just tender. Peel when cold and puree in a blender. Measure 3 tablespoons.
Beat butter and sugar till light and fluffy.
Mix salt and beetroot puree.
Add flour and mix with hands to get soft dough.
Take marble size balls of the dough and press between palms to get cookies of even thickness.
Bake in the pre-heated oven for about 10 minutes or until the edges just begin to turn golden.
