Scalloped Sweet Potatoes

Scalloped sweet potatoes are a twist on this delicious comfort food.  Any dish that is sweet, creamy and cheesy, is guaranteed to be hard to resist.  Layers of sweet potato are covered in a bechamel sauce flavored with pumpkin, garlic, nutmeg, and of course cheese.  This recipe suggests using a variety of cheeses but you can just use your favorite, if you prefer.

Scalloped Sweet Potatoes

1 1/2 cups heavy whipping cream
1/2 cup unsweetened pumpkin puree
1 sprig fresh thyme (or 1/3 teaspoon dried thyme)
2 garlic cloves, smashed
1/4 teaspoon ground nutmeg (freshly grated is best!)
2 large yams or sweet potatoes, peeled and cut into 1/8-inch slices
kosher salt and freshly ground black pepper
4 ounces Fontina, Havarti or cheddar cheese, shredded
1/2 cup freshly grated Parmesan cheese
