Glazed carrots are usually the carrot dish of choice to serve for Easter dinner. If you are willing to try something this year, roasted carrot soup from Set the Table is pretty darn delicious. Carrots, garlic and onions are drizzled with honey and roasted until they reach golden brown perfection. The vegetables are pureed and spiked with cinnamon, cumin and nutmeg. This silky carrot soup is served with plain Greek yogurt and fresh thyme.
