How to Make Homemade Peppermint Patties

With Saint Patrick's Day just two weeks away, it is time to stock up on your favorite green foods, beer and plenty of homemade peppermint patties.  These simple candies pair a creamy peppermint filling with a thin layer of chocolate to create balance of cool and crisp.  For this recipe you can use either dark or milk chocolate depending on your preference.  I prefer dark or bittersweet chocolate because I think it compliments the sweetness of filling better.  I encourage you to eat as many peppermint patties as you please but these candies can also be incorporated into other treats like brownies, cookies, or even a boozy milkshake.

Peppermint Patties

Ingredients:

For the filling:
2 cups (240 grams) confectioners (powdered or icing) sugar
1 1/2 tablespoons (20 grams) unsalted butter, softened
1/4 teaspoon peppermint oil (make sure it is labeled for internal use) (do not use peppermint extract)
1/4 teaspoon pure vanilla extract
2 tablespoons (30 ml) evaporated milk

For the chocolate coating:
8 ounces (240 grams) semi sweet or bittersweet chocolate, coarsely chopped
1 tablespoon (12 grams) shortening
