Healthy Breakfast Recipe: Coconut Chia Porridge

We love this good-for-you breakfast served hot as a porridge or as a tasty chilled pudding. Either way you are off to a great start as this meal is packed with powerhouse ingredients such as flaxseed meal, chia seeds, hemp hearts, and nutrient-dense superfoods like sweet-tart golden berries (also known as Peruvian ground cherries) and goji berries.

Coconut Chia Porridge
Adapted from the Thrive Market 5-Day Detox diet
Makes 2 servings

Look for some of these harder to find ingredients on Thrive Market. They're deeply discounted!

2 cups unsweetened coconut milk beverage
Dash of vanilla extract
2 tablespoons flaxseed meal
2 tablespoons hemp hearts
2 tablespoons chia seeds
8 tablespoons unsweetened shredded coconut
Pinch of salt
Season to taste with agave syrup or honey (optional)

For the topping:
Fresh raspberries
Toasted coconut
A handful of golden berries (optional)
2 tablespoons goji berries

Bring coconut milk to a gentle boil then add the flaxseed meal, hemp hearts, chia seeds, coconut and salt. Reduce to a simmer and cook, stirring frequently, until porridge begins to thicken; about 5 minutes.

Season to taste with agave syrup or honey if you’d like it to be a bit sweeter.

Top with the toppings and serve immediately or refrigerate (toppings and all) and enjoy as a chilled pudding later on.
