Cold Brew Chocolate Chunk Ice Pops

Cold brew is a food trend that I can definitely get behind.  This coffee brewing method requires no fancy coffee machines or even electricity for that matter (except to grind the beans).  These cold brew chocolate chunk ice pops are the perfect pick me up on a hot summer day.  This 4 ingredient frozen dessert can be thrown together in minutes, you'll only have to wait until the pops freeze solid.  You can also turn these ice pops into boozy pops by adding a shot or two of coffee liqueur or bourbon.

Cold Brew Chocolate Chunk Ice Pops

Ingredients:

2 cups cold brew coffee
1/4 cup heavy cream
3 tbsp vanilla syrup
1/4 cup chopped dark chocolate

Directions:

Step 1: Prepare the cold brew coffee the night before.  For instructions on how to make cold brew coffee at home, click here.

Step 2: In a pitcher, combine the coffee, heavy cream and vanilla syrup. Mix until the ingredients are well combined.

Step 3: Sprinkle some chopped dark chocolate into each mold.  Pour the coffee mixture into each mold until almost filled.

Step 4: Cover the top of the mold in foil and place the into the freezer.  Freeze until set and solid.
