I don’t know about you, but when it gets this hot the last thing I want to eat is a warm and heavy meal. On days like this in Ottawa, mum and I would often drive to the cottage, stopping at the Carp farmer’s market on the way.

I inherited this recipe from my husband’s family. It is a perfect weeknight meal. Make sure that you make enough for leftovers!

Yum. One bite and I’m instantly transported back to NYC... Ah maybe I do miss New York!

Eggplant appears in some form or fashion on almost every antipasti table throughout Italy. The combination of flavors in this particular variation is incredible and makes a fabulous addition to an antipasti table or can be served as a delicate Summer salad.

I introduce to you, the Costello’s Spicy Herby Potatoes. I’ve taken them on every picnic imaginable since I discovered how fab they are – Freezing cold New Year’s Day walks, meals on the beach in Biarritz in sublime temperatures, the grotty picnic room of local outdoor play areas – you name it, they’ve been devoured there!

With this recipe, I am especially smitten because instead of having some carb-y macaroni, you have a nutty, protein-packed substitute. It makes you feel not so bad about all the cheese you are about to ingest (although it's really not too much per serving).

I would give anything to have a backyard with a cool, refreshing pool these days, but since I don't think my apartment building plans to turn the parking lot into an outdoor pool any time soon, I've been settling for the next best thing for cooling off - popsicles!

Lunch is so often forgotten, but such an open ended meal. I like lunch because it’s sort of an anything goes arena of the food world. Oftentimes I’ll simply make a second breakfast, something like an omelet with some berries.

I love making stuffed mushrooms, and they’re so quick on a weeknight. For the nights when I don’t want meat, these fill their place easily. I sometimes change up the ingredients in the stuffing depending on what I have lying around.

Everyone built his or her own tacos to perfection. The only unfortunate thing about this recipe is that we ate all the shrimp and wanted more! Get messy! Have fun! And eat healthy!

Just yesterday, I shared my love for Bibimbap in this post. Bibimbap is a Korean rice bowl dish with different kinds of stirfried or fresh vegetables with a spicy gochujang sauce.

This recipe is inspired from an old American classic, Mac and Cheese, by Kelly Mulcair from Inspired Edibles. Just wait until you try this. This recipe is deceptively simple with only three ingredients and loaded with flavor.

What’s not to love about mussels – they’re succulent, tender, salty and a bit sweet. Many of us have gone to the fish market or local grocery store and grabbed a bag of mussels sitting on ice and cooked a great bowl of mussels. But this time I wanted to go to the source.

Depression Cake? Yep, that's what I said. Actually, this is called "depression cake" because the recipe is from the time of the Great Depression, when eggs were scarce.

Ok, yum. I think this may have been the best idea since sliced bread. Wait, this is sliced bread!

Warm. Chocolate. Gooey. This pie is everything you’d want in a cookie. Except, oh yes, it happens to be five times thicker!

We have had some steamy hot Minnesota summer days in the past week. Summer! I love it! We have been trying to squeeze in all kinds of summer activities, you know, in between sicknesses.

The red pepper flakes and lemon add a little zing to this recipe. These are cheap and easy yet will impress your guests!

I am going to post a few recipes for baked pasta and might as well start with the most popular baked pasta, Mac and Cheese. I like my mac and cheese not too wet with a crisp top layer.
