I did promise you many popsicles recipes, didn’t I? So here I am today sharing a new one! Coffee, chocolate, and milk in a popsicle! For the coffee I use espresso made with my MioAsia espresso machine, if you haven’t got one just brew very strong coffee, ok? Ok…let’s get started!

These bite size nests are the perfect little dessert for any spring party or gathering and they're even gluten free! The filling is not to sweet due to the right amount of refreshing lemon flavoring and the shells have the perfect crunch from the baked coconut flakes. To die for!

In the past, I’ve always had crappy results when I’ve tried to cook a whole chicken in the slow cooker. The bird would always be overcooked, stringy, mushy, and dry. Super icky. Last night, I cooked a whole chicken in my slow cooker and it was AMAZING! I‘ll never prepare a whole chicken any other way again. Yes, that was a hyperbolic statement but I’m sticking with it.

Not only is this recipe super simple with only 7 ingredients, but it’s also EGGLESS! So pop in some carob chips or other dairy free chocolate and you’ve got yourself a stack of…Vegan pancakes!

This was my very first attempt to make fudge. Fudge recipes have always intimidated me because I have no experience with candy thermometers and “soft ball stages”. I searched for a recipe that was not difficult and didn’t require any of those “scary” elements.

The literal translation of kalua, is “to bake in the ground oven,” known in Hawaii as an imu. Having kalua directly from an imu is a special treat, and unless you have friends with connections, the only way you can enjoy it at home, is to buy kalua-like pork from a grocery store.

I played a little game in my head called connect the dots of random foods - duck > duck in orange sauce > beets with orange zest > orange zest and fennel > needs a little kick....sauteed beet greens with chili flakes! Yes, things like this happen in my head...and off I went!

Asparagus should be picked the day the shoots come out of the soil, otherwise they quickly grown into leafy ferns. Despite what you or my children think you know about asparagus, they are delicious!

Sweet, spicy and savory, candied jalapeno rings are way too easy to eat on just about everything. The result was gobsmackingly, head-spinningly, brain-addlingly delicious.

I decided to turn the regular tapioca pudding into a chocolate tapioca pudding with cocoa powder, which I already had on hand. Then I decided to add a bit of cinnamon and a dash of cayenne to give it a mild, Mexican-chocolate accent.

I had high hopes for these bunnies. I ended up making the recipe twice, the first batch didn't quite look like bunnies, more like lumps. I was completely bummed, but, persevered.

I ate my roasted grapes in a salad with crumbled goat cheese and spinach, which was perhaps the most simple and delicious lunch I've had in months. I knew the grapes would go perfectly with goat cheese, but the oil and moisture from the grapes canceled out the need for any additional dressing, too!

Last weekend I decided on a whim that it was, without a doubt, the official start of BBQ season. It was a beautiful day and we flung open the doors on to the balcony, letting sun stream into the flat, fired up the grill and had a bunch of mates over to devour what I rather modestly titled a ‘Mexican Feast’.

It's probably a cold day where most of you are today... at least it is here. This is the perfect dish to make on a day like this. It's a little time consuming, but it's not hard and the finished product is full of flavor, spicy (duh, I made it), and makes perfect leftovers for lunch the next day or even another dinner the next night.
