poisses de Bourgogne is a French cheese made in the village poisses found in the commune of Cte-d'Or. It is a pungent unpasteurized cows-milk cheese with a washed-rind. It is circular with a distinctive soft red-orange color and sold in a circular wooden box. It is best served with a Burgundy wine or Sauternes. Its odor is so strong that reportedly it has been banned from French public transport.
