Add some fresh herbs such as sweet basil and rosemary, and thyme plus salt and pepper to taste. Drizzle with a little oil and oven roast in a closed lid pan. Just before dishing up, remove lid and roast under grill till golden brown. This way the quaill stays moist and have a good colour.
