You'll want something that is a little acidic and spicy. Try using horseradish. You can grate fresh horseradish root and puree with a little sour cream and honey. Experiment with combinations of curry or turmeric.

Do you have whole grain mustard?? If you do, take that and add about 1 tsp white wine to each 1/4-1/3 cup.
