There isn't an exact conversion since one is volume and the other is weight.
That said, the conversions are roughly:
Cornstarch 5.5 oz = 1 Cup
Sugar 5.5 oz = .6 Cup
If you can get a small scale to weigh, that would be best.
Good luck!

Cornstarch is less dense than sugar, which is why that's the conversion. But I agree, I seems like a lot for a recipe...unless there's another flour in this recipe?
Can you share the rest of the ingredients and or link to the recipe if it's online?

yes there is another flour in the recipe- it is 12 ounces of all-purpose flour which i was able to change to 1 1/2 cups of flour. 6 ounces of whole wheat flour =3/4 cup. the recipe is for whole wheat shortbread cookies from huckleberry cafe' in santa monica. i have heard these are amazing and the shortbread can be made as either a cookie or as a base and add your own yummy topping.
yes the recipe is on line i don't have the link but just type in whole wheat shortbread cookies and look for the link that has zoe nathan's name. those are the ones.
i hope this helps.
thank you.
