I had a great omelette recently at one of my favorite breakfast spots. There was feta in the omelette and it was very salty. Just wondering if anyone knows if a lower-sodium feta is available?

Feta is a brined cheese- usually a salt brine. A company named Mozzarella Co makes some lower sodium cheeses they may have a feta. www.mozzco.com
Fresh cheeses have a higher moisture content and are usually lower in fat and sodium than other cheeses- If you have a cheese maker close by- check with them. We have a local goat cheese maker that has the most amazing local feta that is much less salty than the typical grocery store brands.
You can also try Queso Fresco- a Mexican version.

Try the French Feta if you can find it. Hyder's Market in Worcester MA carries an excellent one.
