You should need about 25-30 lbs- that's roughly about a 1/3 - 1/2 lb per person. It will vary depending on what the rest of your menu consists of, and the appetites of your consumers.

Generally, when deciding on portion size for potatoes, the average is one potato per person. In the case of potato salad, that would be about 3/4-cup per person. That works out to about 45 cups of salad. Hope this helps!

I second the potato-per-person suggestion. That makes sense. But also consider what else and how many other dishes will be served.
