- 3 slices Moist bread, torn into small pieces(optional)
- pound Mozzarella cheese, diced(optional)
- 1 Egg, beaten(optional)
- pound Ground beef(optional)
- 1 can Tomato sauce (15 ounce)
- Shredded Mozzarella cheese
- 6 ounces Fresh mushrooms, sliced and sauteed
- teaspoon Oregano
- cup Grated Parmesan cheese
- 2 Eggs, beaten
- teaspoon Thyme
- 2 cups Ricotta cheese (or small curd cottage cheese)
- 1 large clove Garlic, minced
- 2 teaspoons Instant chicken bouillon
- cup Chopped onion
- 1 package Frozen chopped spinach (10 ounce), thawed and drained
- 1 package Manicotti (8 ounce)
Instructions
Step 1
Cook manicotti according to package directions; drain well. In a mixing bowl, combine chopped onion, thawed and drained frozen spinach, instant chicken bouillon, 1 large clove minced garlic, thyme, 2 cups ricotta cheese (or small curd cottage cheese), 2 beaten eggs, grated Parmesan cheese, oregano, and half of the 6 ounces of sliced and sauteed fresh mushrooms. Fill the cooked manicotti shells with the spinach mixture. Arrange the filled manicotti in a greased 9x13 baking dish. Pour the 15 ounce can of tomato sauce and the remaining mushrooms over the manicotti.
Step 2
Sprinkle additional oregano and shredded Mozzarella cheese over the dish. Cover the baking dish and cook at 350 degrees Fahrenheit until hot and bubbly.
Step 3
**Alternate Meat Filling:** If using the alternate meat filling, brown the ground beef in a skillet; drain any excess fat. In a mixing bowl, combine the browned ground beef with milk, 1 large clove minced garlic, thyme, oregano, 3 slices moist bread (torn into small pieces), diced Mozzarella cheese, and 1 beaten egg. Stuff the cooked manicotti shells with the meat mixture. Proceed with step 2 (sprinkle with oregano, cover with Mozzarella, cover and bake).
