Spinach and Rice Pilaf

  • 1 tablespoon extra virgin olive oil
  • 1/3 cup orzo pasta
  • 1 cup white rice
  • 2 cups chicken stock
  • 2/3 cup Parmesan cheese
  • chopped spinach

Instructions

Step 1

4 to 5 minutes

Heat extra virgin olive oil in a sauce pot over medium heat. Add the orzo and toast until the grain is deeply golden in color, about 4 to 5 minutes.

Stir in white rice and toss to combine.

16-17 minutes

Add chicken stock. Reduce the heat to a simmer, cover and cook until tender.

Stir in the chopped spinach and Parmesan cheese, then toss to combine.

Transfer and serve.
