- 3 1/4 teaspoons Active dry yeast
- 1 teaspoon Salt
- 3 1/3 tablespoons Brown sugar
- 1 cup Grated cheese (cheddar, jack, or other)
- 1 1/8 cups Lukewarm water
- 3 cups White bread flour
- 1 tablespoon Granulated sugar
- egg Egg(optional)
- Sesame or poppy seeds(optional)
- Cornmeal
- spray Non-stick vegetable coating(optional)
Instructions
Step 1
Reserve half of the grated cheese for sprinkling on top of bagels before baking.
Step 2
Add active dry yeast, salt, brown sugar, the remaining half of the grated cheese, lukewarm water, and white bread flour to the bread machine according to manufacturer's instructions. Start the dough cycle. Remove the dough from the machine after the first knead.
Step 3
Transfer the dough to a floured surface. Divide it into 8 equal portions. Form each portion into a ball, then gently press your thumb through the center and slowly stretch to form a bagel shape.
Step 4
Set aside two small (approximately 1/4-inch) balls of dough to use as test pieces. Allow the formed bagels to rise until doubled in size.
Step 5
While the bagels are rising, in a large saucepan, bring 3 quarts of water and 1 tablespoon of granulated sugar to a rapid boil.
Step 6
Once the bagels have doubled in size, drop one of the reserved test dough balls into the rapidly boiling water. If it immediately pops to the top, the bagels are ready to be boiled.
Step 7
Using a slotted spoon, carefully drop 2-3 bagels into the rapidly boiling water. Boil on each side for 30 seconds. Remove the boiled bagels and cool them on a rack.
Step 8
Brush the bagels with egg wash or spray with a non-stick vegetable coating (if desired, as an alternative to egg wash). Sprinkle with the reserved grated cheese and optionally with sesame or poppy seeds.
Step 9
Preheat the oven to 400°F. Sprinkle a baking sheet with cornmeal.
Step 10
Place the prepared bagels on the cornmeal-sprinkled baking sheet. Bake until golden brown.
