- 2 pounds ground beef (preferably 22% fat or less) or ground turkey
- 4 red potatoes, washed and finely diced
- 3 carrots, peeled and finely diced
- 1/2 onion, finely chopped
- 1 small can pickled jalapeño peppers with carrots, chopped
- 3 zucchini
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1 leaf bay leaf
- 1 pinch cumin
- 1 pinch oregano
- salt and pepper(optional)

Step 1
Heat one teaspoon of oil in a skillet. Add all ingredients except for the zucchini. The amount of chile is to taste, but it is suggested to add the liquid from the can as it provides flavor.

5 minutes
Once the meat is cooked and the potatoes are tender, add the zucchini and cook for 5 more minutes. Serve hot with refried beans.
