Spinach and Chicken Sandwich
Half a bunch of spinach leaves.
Few chunks of boneless chicken
3 cloves of garlic
1 glass of milk
1 cheese cube
1 cup of chicken stock
2 tablespoon All purpose flour
Black pepper powder
Salt to taste
Pinch of sugar
Sprinkle pepper powder on the chunks of chicken and boil it with salt for 15 mins.
Blanch the spinach leaves with hot water for 3-4 mins. Once blanched, drain the water and chop the spinach leaves finely.
Chop 3 cloves of garlic finely.
Once the chicken is boiled keep aside the chicken stock.
Dice the boiled chicken into small pieces.
In a pan, heat 2 tablespoon's of butter.
Add in the chopped garlic and saute it.
Next put the All purpose flour and let it turn cream in colour.
Once it bubbles, pour the milk and chicken stock. (Use the chicken stock according to your need)
Dice the cheese cube and put it in the white sauce
Season the sauce with Italian seasoning (you can use oregano and chilli flakes too), black pepper powder, a tea spoon of salt and sugar. Do not add too much of salt as the Italian seasoning, butter, cheese and chicken stock already contain salt.
It's time to now add the chopped spinach and boiled chicken pieces to the sauce.
Keep stirring it till the sauce thickens.
Once it reaches the right consistency, layer this thick sauce filling in between 2 bread slices.
Toast the sandwich with butter on both the outer sides.
