  • 1.5 pounds boneless skinless chicken breast, cubed
  • 4 apples apples
  • 1 cup grapes, whole
  • 1/2 cup raisins
  • 1 red bell pepper red bell pepper

  • 2 cups your favorite yellow curry sauce
  • 2 teaspoons Jamaican all spice

  • 6 cups brown rice

Step 1

Peel the carrots and cut into a fine dice. Core and seed the bell pepper, then cut into a fine dice. Core the apples and chop into 1/2 inch cubes. Place the chopped apples in water to prevent browning.

Cube chicken breasts into 1-inch cubes. Season the chicken cubes with salt, pepper, and allspice. Heat oil (not specified in ingredients, but implied for cooking chicken) in a pan, add chicken, and cook through. Remove the cooked chicken and set aside.
