Ingredients
- 1.5 pounds boneless skinless chicken breast, cubed
- 4 apples apples
- 1 cup grapes, whole
- 1/2 cup raisins
- 1 red bell pepper red bell pepper
- 4 carrots carrots
- 2 cups your favorite yellow curry sauce
- 2 teaspoons Jamaican all spice
- salt
- pepper
- 6 cups brown rice
Instructions
Step 1
Peel the carrots and cut into a fine dice. Core and seed the bell pepper, then cut into a fine dice. Core the apples and chop into 1/2 inch cubes. Place the chopped apples in water to prevent browning.
Step 2
Cube chicken breasts into 1-inch cubes. Season the chicken cubes with salt, pepper, and allspice. Heat oil (not specified in ingredients, but implied for cooking chicken) in a pan, add chicken, and cook through. Remove the cooked chicken and set aside.
Step 3
To the still hot pan, add the diced bell pepper, carrots, and raisins and cook until softened. Add the chopped apples, whole grapes, and cooked chicken cubes to the pan. Pour your favorite yellow curry sauce over all ingredients.
Step 4
If the sauce is too thin (because the apples will release liquid), cook uncovered on high for a few minutes to thicken.
Step 5
Serve the Caribbean Chicken Curry over brown rice.
