- 3 packets Truvia or Stevia
- 2-3 tablespoons honey or maple syrup(optional)
- 4 ripe bananas, mashed
- 2 cups frozen blueberries
- 3 eggs
- chia or flax eggs(optional)
- 1 1/2 teaspoons baking soda
- 2 tablespoons olive oil or grapeseed oil
- 1/4 teaspoon sea salt
- 3 cups almond flour
Instructions
Step 1
Preheat oven to 350 degrees F. Grease the bottom and sides of a 9x13-inch glass pan.
Step 2
In a bowl, combine almond flour, sea salt, and baking soda.
Step 3
In a separate bowl, whisk together the oil (olive or grapeseed) and eggs (or chia/flax eggs).
Step 4
Add the mashed bananas and sweetener (Truvia/Stevia or honey/maple syrup) to the wet mixture. Beat the wet and dry mixtures together thoroughly.
Step 5
Fold in the blueberries.
Step 6
Pour the batter into the prepared pan and sprinkle additional blueberries on top.
Step 7
Bake for about 40 minutes, or until the edges are brown and a toothpick inserted into the center comes out clean.
Step 8
Let the bars cool for about 10 minutes before serving.
