- 1 pound mild bulk pork sausage
- 1 teaspoon ground cumin
- 2 clove chopped garlic
- 2 medium onions, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 2 cup stock (chicken, beef, or vegetable)
- 2 jalapeno peppers, minced and seeded
- 1 package 6 1/4 ounces fast-cooking long grain and wild rice mix

In a large skillet, cook the sausage, cumin, and garlic over medium heat until the meat is no longer pink; drain any excess fat. Add the chopped onions and peppers to the skillet and sauté until they are crisp-tender.

5-10 minutes or until all the water is absorbed
Add the stock to the skillet. Stir in the minced jalapenos, the fast-cooking long grain and wild rice mix, and the seasoning packet from the rice mix. Bring the mixture to a boil. Reduce heat and simmer, uncovered, for 5-10 minutes or until all the water is absorbed.
