  • 1 tablespoons ground almonds
  • 2 tablespoons brown sugar
  • 3 tablespoons coconut
  • 100 grams unsalted butter
  • cups self-raising flour

  • 1 teaspoons lemon juice
  • teaspoons ground cinnamon
  • 1 teaspoons golden syrup
  • 2 tablespoons caster sugar
  • 1 tablespoons brandy
  • 500 grams apricots

Step 1

Split apricots in half, discard the stone, and place them in a buttered pie dish with caster sugar, golden syrup, brandy, lemon juice, water, and ground cinnamon.

For the topping, rub unsalted butter into the self-raising flour until the mixture is crumbly. Add brown sugar, ground almonds, and coconut, then mix to a crumbly consistency.

Sprinkle the topping mixture evenly over the apricots in the dish.

Bake in a moderate oven (350F/190C) for about 30 minutes, or until lightly browned. Note that cooking time may vary with the depth of the fruit and crumble.
