- 4 ounce crumbled blue cheese
- 1 head medium lettuce
- 1 clove garlic, crushed
- 1 small cauliflower, sliced
- jar small sliced green olives
- 1 medium sweet onion, thinly sliced
- 1 teaspoon coarse ground black pepper
- 2/3 cup olive oil
- 1/2 cup wine vinegar

Drain the olives. In a covered bowl, combine the drained olives, sliced cauliflower, sliced onion, and black pepper.

In a separate small bowl or measuring cup, mix well the olive oil, wine vinegar, and crushed garlic.

Pour the olive oil mixture over the ingredients in the covered bowl. Cover the bowl and refrigerate to marinate.

The next day, prepare the lettuce for salad and place it in a large bowl.
