- fresh raspberries(optional)
- 40 cookies crumble
- cup coarsely vanilla wafers
- cup heavy or whipping cream(optional)
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- 3 tablespoons coffee-flavor liqueur
- 1 ct whipped cream cheese (8 oz)
- 2 sqr semisweet chocolate (1 oz)
- 1 pkt frozen red raspberries in light syrup (10 oz)
Instructions
Step 1
Thaw frozen raspberries as label directs. Meanwhile, grate semi-sweet chocolate. Reserve 1/4 cup grated chocolate for garnish. In a large bowl, with a wire whisk or fork, beat cream cheese, coffee flavor liqueur, milk, vanilla extract, and remaining grated chocolate until well blended.
Step 2
In a small bowl, with a mixer at medium speed, beat heavy or whipping cream and confectioners' sugar until stiff peaks form. Reserve 2 cups of the mixture for topping. With a rubber spatula or wire whisk, fold the remaining 1 cup whipped cream mixture into the cream cheese mixture.
Step 3
Into 8 dessert glasses, place half of crumbled vanilla wafers. Top with half of the cream cheese mixture. Spoon half of the thawed raspberries with their syrup over the cheese mixture. Top with the remaining vanilla wafers, remaining thawed raspberries, then with the remaining cream cheese mixture.
Step 4
Spoon reserved whipped cream mixture into a decorating bag with a small rosette tube. Pipe whipped cream around the edge of each dessert glass. Sprinkle reserved grated chocolate in the center of each dessert. Garnish with fresh raspberries. Refrigerate at least 2 hours to blend flavors.
