Strawberry and Goat Cheese Pavlova
This is the creation of Chef Amy Vanclef , who studied at the California Culinary Academy, She has been with La Pastaia in San Jose, Ca for 18 years. Her dessert philosophy is "Make things interesting, simple not fancy, and good!"

- 2.0 teaspoon distilled white vinegar
- pinch salt
- 2.25 cup granulated sugar
- 6.0 egg whites
- 1.0 teaspoon vanilla extract
Instructions
Step 1
Combine egg whites with salt and beat until firm, shiny peaks form.
Step 2
Gradually add 1-1/4 cups of the sugar and continue to beat until stiff and glossy.
Step 3
Fold in the vinegar, vanilla, and 1/2 cup of the remaining sugar.
Step 4
Mist some water on parchment paper that is on a baking pan, and spoon the meringue mixture into the desired shape.
Step 5
Bake until the outside is crisp and just set in the center.
Step 6
Set aside until cool.
Step 7
Scoop goat cheese gelato into the center, and spoon strawberries marinated in balsamic vinegar and sugar, over top.
Step 8
Serve and enjoy!
