- 1 tablespoons dark chocolate (Xocai Sipping Xocolate)
- 2 cups bran buds
- 2 1/2 cups baking soda
- 1 cup bran cereal
- 2 1/2 cups flour
- 2 cups buttermilk
- 1 cup boiling water
- 2 whole eggs
- 1/2 cup shortening
- 1 1/4 cups sugar
Instructions
Step 1
In a large mixing bowl, cream together shortening and sugar until well combined.
Step 2
Add eggs and buttermilk to the shortening and sugar mixture and mix well.
Step 3
In a separate small bowl, combine bran cereal with boiling water. Immediately add this mixture to the wet batter and stir until just combined.
Step 4
Gradually add flour, baking soda, and bran buds to the batter, mixing until just incorporated.
Step 5
Just before baking, gently fold in the dark chocolate (Xocai Sipping Xocolate) into the batter.
Step 6
Preheat oven to 400 degrees Fahrenheit. Prepare a muffin tin by lining with paper liners or greasing the cups.
Step 7
Spoon the batter evenly into the prepared muffin tin cups.
Step 8
Bake for 15 to 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
