- 1/2 cup granulated sugar

- 1/3 cup apricot preserves

- 1/2 package 3.4 ounce vanilla instant pudding mix

- 1/4 teaspoon salt

Instructions
Step 1
Place butter in a large bowl. Beat with a mixer at medium speed until fluffy. Add granulated sugar and brown sugar, beating until blended. Add apricot preserves, vanilla extract, and egg, beating just until blended.

In a separate bowl, combine flour, quick-cooking oats, vanilla instant pudding mix, baking soda, salt, and craisins.

Gradually add the flour mixture to the butter mixture, stirring just until combined.

Drop the dough by teaspoons onto lightly buttered cookie sheets.

Bake at 350 degrees Fahrenheit for 12-14 minutes or until lightly browned. Let cool on the cookie sheets for 2 minutes or until firm, then remove cookies and place on a wire rack to cool completely.
