Instructions
Step 1
First make the <a href="/technique/7CGY8RP7/dressing">dressing.</a> <a href="/technique/7S3QCKWK/mix">Mix</a> together the garlic, black pepper, lemon <a href="/technique/QDWRNXYW/juice">juice</a>, Japanese soy sauce, <a href="/technique/S6W4FR7F/blend">blend</a> together with grape <a href="/technique/FYFCQVPR/seed">seed</a> oil and <a href="/technique/3CYMY2D7/whisk">whisk</a> with a <a href="/technique/S6W4FR7F/blender">blender</a>.
Step 2
Use very thin French pastry and <a href="/technique/XZBDDD5G/cut">cut</a> into triangles.
Step 3
<a href="/technique/6L7QNTJV/chop">Chop</a> <a href="/technique/G38PSPJV/scallop">scallops</a> and rock shrimp and add pepper. Place Japanese salad leaves on to the pastry placing the shrimp on <a href="/technique/R34ZSY3M/top">top</a> and <a href="/technique/3JDX2Q84/sliced">sliced</a> mushrooms.
Step 4
<a href="/technique/8M4FMXQ6/fold">Fold</a> tightly and <a href="/technique/Y4VX66KP/deep-fry">deep fry</a> for 2-3 minutes. Make sure the oil is at least 190 degrees. Place the <a href="/technique/7CGY8RP7/dressing">dressing</a> in a cocktail glass and place the two hariaki into the glass dipping into the <a href="/technique/7CGY8RP7/dressing">dressing</a>.
Step 5
To <a href="/technique/HZXPVMNR/garnish">garnish</a> place caviar on to the spring <a href="/technique/LTNN8R88/roll">rolls</a>, decorate with gold leaf.
